Turkey goulash with apples

Ingredients for 4 servings:

  • 800 g turkey breast
  • 2 apples
  • 2 tbsp lemon juice
  • 1 red chili pepper(s)
  • 1 piece(s) ginger root, small
  • 20 g clarified butter
  • 20 g chips (coconut)
  • 2 tsp curry powder
  • salt and pepper
  • 125 ml apple juice
  • 500 ml water
  • 200 g basmati
  • 2 bunch of spring onions
  • Sauce thickener

Working time approx. 45 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 15 minutes

fruity, delicious with rice

Cut the meat into cubes. Wash, core, and wedge the apples. Drizzle lemon juice over the apples. Deseed the chili pepper and slice into very fine rings. Peel and finely grate the ginger. Heat the lard in a roasting pan. Roast the coconut chips in it until golden brown and remove. Brown the meat. Season with curry, salt, pepper, ginger, and chili. Pour in the apple juice and 500 ml water and bring to a boil. Cover and simmer for 5 minutes. Wash the spring onions and slice them into rings, add them to the meat with the apples, and simmer for 5 minutes. Add 2-3 tablespoons of sauce thickener to the goulash and bring everything back to a boil. Season to taste. Meanwhile, prepare the rice according to the package instructions. Drain the rice, sprinkle with the coconut chips, and enjoy with the goulash.
