Turkey leg according to Grandma Rita

Ingredients for 4 servings:

  • 1 large turkey leg(s), approx. 1200 g
  • 200 g bacon or smoked bacon
  • 4 m.-sized onion(s)
  • 1 tbsp allspice berries
  • 1 tbsp cranberry jam
  • 1 cup sour cream, 200 g
  • 1 tbsp flour

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 1 hour 40 minutes; Total time approx. 2 hours

Clean the turkey leg and rub it with salt and pepper on both sides. Line a roasting pan with bacon, place the turkey leg on top, and add about 3 cm of water. Peel and eighth the onions, then add them to the roasting pan along with the allspice berries. Cook in the oven with the lid closed at 200 degrees Celsius for one hour. Then remove the lid and brown for another 20 to 30 minutes. Baste with liquid occasionally while browning. Add a little more water if necessary. Then remove the turkey leg, collect the liquid in a container, and set aside. Sprinkle a tablespoon of flour over the remaining bacon slices and onions in the roasting pan and continue heating, stirring, until all the liquid has evaporated. Return the reserved liquid to the roasting pan and bring to a boil briefly. Then strain the thickened liquid through a sieve and collect it in a saucepan. Season to taste with cranberry jam, sour cream, salt, and pepper. Red cabbage and dumplings go well with it.
