Turkey mince pan with zucchini and tomato sauce

Ingredients for 4 servings:

  • 1 can of corn
  • 1 large zucchini
  • 4 spring onions
  • 1 garlic clove(s)
  • 350 g minced turkey
  • 2 tbsp rapeseed oil
  • 2 tbsp tomato paste
  • 3 sprigs of oregano
  • 1 stalk of basil
  • 500 g tomatoes, chopped
  • 160 g wild rice
  • Water
  • Salt and pepper from the mill

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 55 minutes

Drain the corn. Wash, trim, and dice the zucchini. Trim and finely slice the spring onions. Peel and finely dice the garlic. Sauté the minced meat in a pan with 2 tablespoons of oil for 15 minutes. Add the garlic, spring onions, corn, and tomato paste and bring to a boil, then season. Stir in the tomatoes and simmer for about 20 minutes. Finally, wash, chop, and sprinkle the oregano and basil over the meat. Meanwhile, cook the rice in a pan of lightly salted water for 15-20 minutes. Serve the rice with the minced meat.
