Turkey rolls with wild garlic filling and fried potatoes

Ingredients for 4 servings:

  • 600 g turkey schnitzel
  • 1 bunch of wild garlic
  • 250 g cream cheese
  • 5 dashes lemon juice
  • salt and pepper
  • 2 tbsp oil
  • 8 large potatoes

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Boil the potatoes with their skins on. Flatten the turkey escalopes with a meat tenderizer or the bottom of a saucepan, then cover the meat with cling film. Wash the wild garlic thoroughly and cut into strips. Mix 3/4 of the wild garlic with the cream cheese and lemon, and season with salt and pepper. Spread the herb filling evenly over the flattened turkey escalopes. Roll up the turkey escalopes and secure with string or toothpicks. Sear on all sides in oil and finish cooking in a preheated oven at around 180°C. Meanwhile, cut the potatoes into even pieces and fry in the same pan until crispy. Finally, add the remaining wild garlic and season with salt and pepper. Arrange everything on a plate and enjoy this spring-fresh dish.
