Ingredients for 4 servings:
- 8 chicken thighs, seasoned
- 4 bell peppers, mixed
- 4 large onions
- 2 cloves garlic, more if desired
- oil
- 10 potatoes
- Paprika powder, hot and sweet
- possibly thyme
- possibly rosemary
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Lightly oil a baking sheet. Cut the peeled potatoes, bell peppers, and onions into bite-sized pieces, mix with paprika and oil, and spread them on the baking sheet. Add the garlic cloves (whole, halved, or sliced). Season with thyme or rosemary, if desired. Place the seasoned chicken thighs on top of the vegetables and bake in the oven at 170°C (350°F) for about 1 hour.
