Turkey schnitzel in Gorgonzola sauce

Ingredients for 4 servings:

  • 4 turkey schnitzels
  • 1 onion(s) (thinly sliced)
  • 1 tbsp butter
  • ½ jar white wine, dry
  • 150g Gorgonzola
  • 100 g crème fraîche
  • 2 tbsp pepper, green
  • 1 tbsp gin
  • 1 tbsp parsley, finely chopped
  • Mustard to taste

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Lightly pound the schnitzels, season with salt and pepper. Sauté the onion slices in a large pan with a tablespoon of butter until translucent. Place the schnitzels on top of the onions, cover, and simmer over low heat until almost cooked through. Remove the schnitzels and place them side by side in a greased ovenproof dish. Preheat the oven to 180 degrees Celsius. Mash the Gorgonzola with a fork and add to the pan with the onions. Melt over low heat. Add the crème fraîche, green pepper, gin, and parsley and simmer until reduced to a creamy sauce. Thin with a little white wine, if necessary. Season generously with salt, mustard, and black pepper. Pour the sauce over the schnitzels. Bake in a preheated oven at 200 degrees Celsius for 15 minutes.
