Chicken gyros in Metaxa sauce in the OptiGrill

Ingredients for 4 servings:

  • 600 g chicken breast fillet(s)
  • 1 onion(s)
  • 20 g gyros spice
  • 1 tsp salt and pepper
  • 4 tbsp olive oil
  • 2 tbsp tomato paste
  • 2 tbsp ajvar
  • 50 ml Metaxa
  • 200 ml sour cream
  • 200 ml sweet cream
  • 100 g Emmental cheese

Instructions

Working time approx. 10 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 45 minutes; Total time approx. 2 hours 55 minutes

Quantity for the baking tray of the Optigrill+ XL

Cut the chicken breast into bite-sized strips. Slice the onion into strips. Grate the cheese. Mix the chicken breast with the onions, gyro seasoning, pepper, salt, and 2 tablespoons of olive oil. Cover and marinate in the refrigerator for at least 2 hours. Insert the baking tray, manually set the maximum temperature to red, and preheat for 4 minutes. Add 1 tablespoon of olive oil to the baking tray and add the marinated chicken breast. Close the lid. Turn over after 5 minutes, and remove the chicken breast after another 5 minutes. Add 1 tablespoon of olive oil to the baking tray, add tomato paste and ajvar, and fry briefly. Deglaze with the Metaxa and let the alcohol evaporate for another 3-4 minutes with the lid open. Add the sour and sweet cream and mix well. Add the cooked chicken back in and mix everything well. Sprinkle the grated Emmental cheese over the sauce and close the lid. Bake at medium heat for about 15-20 minutes until the cheese is lightly browned. I recommend rice with it.
