Turkey schnitzel with Parma tomato sauce

Ingredients for 2 servings:

  • 400 g turkey breast
  • 8 slices of Parma ham
  • 400 g tomatoes, chopped from the can
  • 2 tbsp cream cheese, light
  • 400 ml vegetable stock
  • 1 tbsp tomato paste
  • 1 tbsp ketchup
  • ½ tsp garlic granules
  • 1 tsp onion granules
  • 1 tbsp Italian herbs
  • 1 tbsp olive oil
  • salt and pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Low-fat, low-carb

Wash the meat, pat dry thoroughly, season with pepper, and sear it all over in a hot pan with olive oil until lightly browned. Remove the meat from the pan, leaving the pan juices in the pan. Add the chopped tomatoes to the pan and bring to a boil. Then gradually stir in the stock with a whisk. Add the tomato paste, ketchup, the finely shredded Parma ham, and the garlic and onion granules. Return the meat to the sauce and cook for 15 minutes over low heat (with the lid on the pan). Remove the pan from the heat, stir in the cream cheese, and sprinkle with the Italian herbs. Season the sauce again with salt, pepper, and perhaps a pinch of sugar. Green tagliatelle, for example, would be a good side dish. But then the low-carb option is over…
