Turkey skewers with bacon-wrapped dates and salad

Ingredients for 4 servings:

  • 500 g turkey breast
  • 24 dates
  • 12 slices of bacon
  • 4 tbsp olive oil
  • 1 tsp paprika powder, mild or hot (depending on taste)
  • 1 tsp sea salt
  • 1 tsp honey
  • 4 tbsp balsamic vinegar, dark
  • ½ lemon(s), the juice
  • 6 tbsp olive oil, mild, or oil of your choice
  • 1 pinch of sea salt
  • 1 pinch(s) pepper, freshly ground
  • ½ lettuce (head lettuce) or other leaf salad
  • 100 g arugula
  • some basil leaves
  • Olive oil, for the grill pan

Instructions

Working time approx. 35 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 50 minutes

Tapas on a skewer

Cut the turkey breast into approximately 1.5 cm pieces. Wrap the dates in the bacon (cut a slice of bacon in half). Then skewer the wrapped dates, alternating with two pieces of turkey breast. Distribute them on 8 wooden skewers. Combine the olive oil, paprika, sea salt, and honey in a small bowl and brush the skewers with it. Set aside. Prepare the vinaigrette. Dress the salad with the vinaigrette and let stand. Then sear the skewers in a preheated grill pan brushed with a little olive oil. Turn the skewers over (they will be done after about 10-15 minutes). Arrange the salad and skewers on a platter or large plate. Serve with aioli, guacamole, or salsas of your choice.
