Turkey wings in muscat wine

Ingredients for 4 servings:

  • 8 servings of turkey (turkey wings only)
  • 2 onions
  • 5 leaves of fresh basil
  • ¼ liter white wine (Muscat wine)
  • 2 tbsp cream or crème légère
  • Salt and pepper, black or sweet pepper
  • 3 tbsp olive oil

Clean the turkey wings (I prefer the smaller pieces, but you can also use the meatier, larger pieces or whole wings, reducing the quantity accordingly) and sprinkle with salt and pepper. Heat the olive oil in a large pan and sear the wings on both sides, gently browning them. Add the diced onions and sauté over low heat. Deglaze with the Muscat wine (e.g., Rivesaltes) and skim the liquid from the bottom of the pan with a wooden spoon. Top up with 1-2 glasses of water if needed. Cut the basil leaves into strips and add them. Cover and simmer over low heat for 25 minutes, then stir in 2-3 tablespoons of crème légère or cream and season with salt. Serve with basmati rice and a green salad.
