Turkish baked vegetables in tomato sauce

Ingredients for 4 servings:

  • 3 m.-large zucchini
  • 1 medium-sized red onion(s), halved, cut into fine strips
  • 3 garlic cloves, finely chopped
  • 4 bell peppers, red, yellow and green, cut into pieces
  • 1 can/n tomatoes, chopped (400 g)
  • 3 tbsp olive oil
  • 1 small jar of water
  • 2 tsp oregano
  • salt and pepper

Working time approx. 20 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour

vegetarian, gluten-free

Preheat the oven to 200°C. Quarter the zucchini lengthwise and cut into approximately 1/2 cm thick slices. Mix with the bell peppers, onion, garlic, and olive oil. Stir in the tomatoes and water. Season with oregano, salt, and pepper. Place on a baking sheet and bake uncovered for 20 minutes. After 20 minutes, toss the vegetables and bake for another 20 minutes. The edges of the vegetables should turn light brown. Serve as part of a mezze. In Turkish, this dish is called Firin Sebze.
