Turkish flatbread

Ingredients for 1 servings:

  • 20 g yeast, fresh
  • 1 tsp sugar
  • 250 ml water, lukewarm
  • 450 g flour
  • 1 tsp salt
  • 2 tbsp oil (sunflower)
  • 2 tbsp yogurt (3.5%)
  • 1 tbsp milk
  • 1 tbsp oil
  • sesame
  • Black cumin

Instructions

Working time approx. 20 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 20 minutes

Turkish Food

First, dissolve the yeast, sugar, and lukewarm water in a bowl. Then add the flour and knead lightly. Now add the salt, oil, and yogurt and knead everything into a smooth yeast dough and form a ball. Let the dough rise for 1 hour in a warm place. After the first resting period, tip the dough out onto a lightly floured work surface and carefully stretch it into shape. You can shape it round or oval, depending on your preference. Now place the dough on a baking sheet lined with baking paper. You can then fine-tune the shape. Cover the dough and let it rise for another 20 minutes. After the second resting period, press holes into the dough with your fingers. Press a little harder if you like; the indentations will quickly reappear when the dough is ready for the oven. Now carefully spread the milk-oil mixture over the dough and sprinkle with sesame and/or black cumin seeds. Preheat the oven to 200°C (fan). Bake the flatbread for approximately 20 minutes. Immediately after baking, place it on a wire rack and cover with a tea towel. This will make it nice and soft. If you prefer a crispier crust, leave it uncovered!
