Turkish Pide with Cheese and Sucuk

Ingredients for 4 servings:

  • 600 g flour
  • 1 packet of dry yeast or 1/2 packet of fresh yeast
  • 250 ml water, lukewarm
  • 4 tbsp yogurt
  • 4 tbsp olive oil
  • 1 ½ tsp salt
  • 1 tsp sugar
  • 400 g cheese (Kasar), grated
  • 20 slices of sucuk
  • 1 egg(s) for brushing
  • Flour for the work surface

Instructions

Working time approx. 40 minutes; Rest time approx. 1 hour 5 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 2 hours

For the dough, mix the yeast with the water and let it stand for five minutes. Then add it to the flour and knead with the yogurt, salt, sugar, and oil for about seven minutes until smooth. Grease a bowl with oil and place the dough in it. Coat the surface with oil as well. Let the dough rise at room temperature for 60 minutes. Then divide the dough into two (or four) pieces and knead each piece into a ball. Roll each ball out into an oval on a floured surface. Place the finished pieces on a baking sheet. Cover generously with cheese and shape into boats. Place a few slices of sucuk on top of the cheese. Brush the edges of the dough with the beaten egg. Then place everything in a preheated oven at 200°C (top/bottom heat) for about 15 minutes. Enjoy while still warm.
