Turkish potato salad

Ingredients for 4 servings:

  • 1,000 g potatoes
  • 2 bell peppers, green and red
  • 1 lemon(s), juice
  • 2 tbsp olive oil
  • 2 onions
  • salt and pepper
  • possibly paprika powder

Instructions

Working time approx. 20 minutes; Rest time approx. 30 minutes; Total time approx. 50 minutes

Boil the potatoes, peel them, and let them cool slightly. Meanwhile, slice the onions into thin rings and the bell peppers into thin strips. I always use a cucumber slicer. Combine the potatoes, onions, and bell peppers with olive oil and lemon juice, season with salt and pepper to taste, and add paprika if desired. Let it simmer for 30 minutes, then season to taste. Add more oil and lemon juice if desired, and serve fresh. Serve with tzatziki.
