Ingredients for 1 servings:

  • 1 cup jasmine rice, uncooked
  • 1 pointed pepper, red
  • 1 carrot(s)
  • 3 spring onions
  • 1 small can of corn
  • 6 radishes
  • 125 g mozzarella or feta cheese
  • 1 handful of olives, green or black, pitted
  • 1 lemon(s), juice
  • 2 tbsp pomegranate syrup
  • 6 tbsp olive oil
  • 2 garlic cloves
  • 1 tbsp dill
  • 1 tsp mint, dried
  • ½ tsp salt
  • 1 tsp sweet paprika powder
  • 1 pinch of pepper
  • 1 ½ tsp honey or sugar
  • some pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

The perfect rice salad for your next barbecue

For the dressing, combine all ingredients. Cook the rice according to the package instructions and season with salt. Then transfer it to a bowl and add the dressing. Mix everything together. Cut the bell peppers, carrots, spring onions, radishes, and mozzarella into bite-sized pieces and mix with the rice and all the other ingredients. Serve. A super delicious, quick, and refreshing Turkish rice salad that’s perfect for a barbecue or simply as a side dish.
