Turkish yogurt sauce

Ingredients for 10 servings:

  • 1 kg natural yogurt
  • 6 cloves garlic
  • 2 tsp salt
  • 2 tbsp parsley, flat, chopped
  • 2 tbsp sesame seeds

Instructions

Working time approx. 15 minutes; Rest time approx. 10 hours; Total time approx. 10 hours 15 minutes

Drain the yogurt overnight in a sieve lined with kitchen paper. Grind the garlic and salt in a mortar until smooth. Finely chop the parsley. Mix the yogurt with the garlic paste and parsley. Toast the sesame seeds in a dry pan until golden brown, turning frequently. Let cool, and sprinkle over the sauce. Delicious with meatballs or skewers.
