Turmeric rice with two kinds of red onions

Ingredients for 2 servings:

  • 2 onions, red
  • some oil for frying
  • 125 g brown rice
  • 1 tsp turmeric
  • 1 tsp sea salt
  • ½ tsp black pepper
  • 1 tbsp soy sauce
  • 350 g homemade vegetable broth

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Peel both onions and quarter them lengthwise. Slice the first onion into strips and set it aside raw. Slice the second onion into strips, add it to a pan with oil, and fry for 3-5 minutes. Then add the fried onions to the raw onions. Add the rice, turmeric, salt, pepper, and soy sauce to a pot with the vegetable stock. Bring the contents of the pot to a boil and cook over medium heat for 10-12 minutes, until the liquid is almost gone. Stir frequently. Mix the rice and onions well, arrange the dish, and serve.
