Turnip goulash

Ingredients for 2 servings:

  • 500 g turnips
  • 1 large onion(s)
  • 250 ml vegetable stock
  • 2 tbsp tomato paste
  • Paprika powder
  • some butter
  • a little caraway
  • some salt
  • some cayenne pepper
  • some sugar, brown

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour

Roughly dice the turnips and cook in salted water until al dente. Meanwhile, dice the onion and fry in a little butter until translucent. Sprinkle with paprika (don’t be stingy) and caramelize with a little brown sugar. Add the tomato paste and fry briefly. Deglaze with vegetable stock and simmer at low heat for about 10 minutes. Brown the turnips in a pan with a little butter and then add to the goulash sauce. Season to taste with salt, cayenne pepper, and a pinch of caraway.
