Tuscan beans with sage

Ingredients for 4 servings:

  • 350 g beans, white (can)
  • 500 g tomatoes
  • 10 g sage
  • 2 garlic cloves
  • 5 tbsp olive oil
  • salt and pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Blanch the tomatoes, peel, and deseed them. Chop the flesh. Finely slice the sage leaves and mince the garlic cloves. Heat four tablespoons of olive oil in a saucepan and sauté the garlic and half of the sage strips. Drain the beans and add them to the pan along with the tomatoes. Season with salt and pepper and simmer gently for about 20 minutes. Heat one tablespoon of olive oil in a pan and sauté the remaining sage strips. Season the beans again with salt and pepper and sprinkle the fried sage over the beans.
