Tuscan-style beans

Ingredients for 4 servings:

  • 400 g beans, white
  • 1 liter of mineral water
  • 4 garlic cloves
  • 7 sage leaves
  • 6 tbsp olive oil
  • 500 g tomatoes
  • salt and pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Bird’s-eye view

The night before, place the white beans in a bowl and cover with mineral water. Drain the water the next day. Add 1 liter of cold water to the beans and simmer for 1 1/2 hours. Finely chop the garlic cloves. Slice the sage leaves. Let both simmer in the olive oil. Peel and chop the tomatoes, add them to the garlic and sage leaves, and sauté until the tomatoes have reduced to a puree. Add the cooked, well-drained beans. Season with salt and pepper and let simmer gently for 10-15 minutes. The beans are excellent with roasted or grilled meat or sausages.
