Ingredients for 4 servings:
- 4 chicken legs
- 500 g tomatoes, peeled from the can
- 100 g black olives (stoned)
- 1 onion(s)
- 2 cloves garlic
- 200 ml red wine
- sage
- oil
- 1 small can of tomato paste
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Season the chicken thighs with pepper and a little salt. Slice the onion into half rings. Finely dice the garlic. Heat a little oil in a pan and add the chicken thighs, onion rings, and garlic. Brown the chicken thighs, turning them over, until the skin is browned. Then deglaze everything with red wine and add the peeled canned tomatoes and tomato juice to the pan. Stir in the tomato paste and mix. Cover the pan and simmer for 20 minutes. After about 15 minutes, add the olives and heat through. Sprinkle with sage before serving. Serve with fluffy bread baked in olive oil.
