Tuscany Chicken

The perfect tuscany chicken recipe with a picture and simple step-by-step instructions.

  • 300 g Chicken breast
  • 1 Zucchini
  • 1 Clove of garlic
  • 1 Onion
  • 0,5 bunch Fresh thyme
  • 1 tbsp Rapeseed oil
  • 150 g Date tomatoes
  • 200 g Chopped tomatoes (can)
  • 100 ml Vegetable broth
  • 250 g Tortellini filled with cheese
  • 25 g Grated Gruyère
  • Salt and pepper
  1. Rinse the meat with cold water, pat dry and cut into 2 cm pieces. Wash and clean the zucchini, halve lengthways and cut into slices. Wash the date tomatoes, cut in half and set aside. Peel the garlic and onion, dice both finely. Pluck the thyme leaves from the stems and finely chop half of them.
  2. Heat the oil in a pan and fry the meat all over. Season with salt and pepper and remove. Briefly sauté the onion, garlic and chopped thyme in the frying oil. Add the zucchini and sauté briefly. Add the tomatoes and stock, everything for about 5 minutes Let simmer. Add tortellini and meat.
  3. Let the mixture simmer for another 2-3 minutes. Fold in the date tomatoes and let simmer a little more. Divide the Tuscany chicken on plates and serve sprinkled with cheese and a little thyme.
