Ingredients for 4 servings:
- 10 eggs (organic)
- 100 ml cream
- salt and pepper
- possibly chives, chopped
- 3 slices of breakfast bacon
- 1 piece(s) butter
- little oil, tasteless
Instructions
Working time approx. 5 minutes; Total time approx. 5 minutes
– a not at all dry affair –
Crack the eggs and whisk well with the cream. Season carefully with salt and pepper. If you like, you can also add some chives. Heat a medium-sized, non-stick frying pan over medium heat. Add a knob of butter and a little neutral oil. Then add the egg mixture. Using a spatula, push the scrambled eggs from the edge of the pan into the center. Wait briefly until they begin to set again and then continue pushing them. The pan must not be too hot; this is important. When the scrambled eggs are halfway done, turn off the heat completely. The scrambled eggs are done when they are still slightly runny and shiny. When they are then placed on the plate, they are perfect. In the meantime – if desired – fry the bacon slices until crispy. Serve with the scrambled eggs. Toasted bread goes well with the scrambled eggs.
