Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 20 minutes
from a 26cm springform pan
Mix the butter with the sugar, pudding powder, and egg. Mix the flour with the baking powder. Gradually add to the mixture and, using the dough hook of a hand mixer, mix into coarse crumbles. Cover and refrigerate until ready to use. Peel and core the apples, and finely dice them. Then mix well with the rum flavoring, lemon juice, vanilla sugar, and cinnamon. Grease and flour a 26 cm springform pan. Press about half of the crumble mixture into the pan, pulling it up a little at the edges. Pour in the apple mixture and smooth it down. Now spread the remaining batter over the apples as a crumble. Bake in a preheated oven at 160°C (convection oven) for about 50 minutes, increasing the temperature to 180°C for the last 15 minutes if necessary. Remove the cake and sprinkle with a powdered sugar and cinnamon mixture, according to taste. Tastes best served lukewarm.
