Aromatic cookies made from chocolate and red wine, filled with jam, delicious not only at Christmas time!

Melt the chocolate and butter in the microwave at about 600W for about 2-3 minutes (check occasionally), then let cool slightly until the mixture is still thick. Combine the flour, baking powder, cornstarch, cocoa, cinnamon, gingerbread spice, allspice, sugar, vanilla sugar, vanilla flavoring, flavored sugar, and egg in a bowl. Add the chocolate mixture and 6-7 tablespoons of red wine and whisk until smooth. Knead briefly by hand and chill in foil for at least 2 hours. Preheat the oven to 200°C (top/bottom heat). Roll out the dough between foil (add a little more flour if it’s too sticky). Cut out hearts or stars and place on the baking sheet. Cut a hole in the center of half of the cookies (best used with an apple corer). Bake for about 10 minutes and let cool on a wire rack. Repeat with the remaining dough. Mix the jam with the remaining red wine (2 tbsp), heat briefly in the microwave and spread on the cookies without a hole, sprinkle with a little flavored sugar and place the second cookie on top, press down lightly, then dust with icing sugar.
