Ingredients for 1 servings:
- 375 g flour
- 220 g zucchini
- 1 large apple or 2 small ones
- 240 g sugar
- 20 g brown sugar
- 70 g chopped nuts (walnuts or hazelnuts)
- 235 ml oil
- 3 eggs
- 1 pack of baking soda (5 g)
- ½ pack of baking powder
- 1 packet of vanilla sugar
- 7 g cinnamon, 1 pinch of salt
- 3 drops butter-vanilla flavoring
- lemon juice
- Dark chocolate coating, as desired
Instructions
Working time approx. 25 minutes; Total time approx. 25 minutes
Line a 26 cm springform pan with baking paper, grease, and flour. Finely grate the zucchini and apples, drizzle with lemon juice, and cover and refrigerate until ready to use. Roughly chop the nuts. Preheat the oven to 165°C (top/bottom heat). In a bowl, mix the flour with the baking powder, baking soda, vanilla sugar, cinnamon, salt, and nuts. In another large bowl, beat the eggs until light and fluffy. Now stir both sugars and oil into the egg mixture, alternating between them. Stir in the grated zucchini and apple, and the vanilla extract. Gradually stir the flour mixture into the mixture to form a smooth batter. Pour the batter into the pan. Bake on the middle rack for 60-70 minutes. Let cool thoroughly, then decorate with chocolate coating, if desired.
