Vadai – Indian cookies made from yellow peas

Ingredients for 6 servings:

  • 500 g peas (shelling peas), yellow, dried
  • Water for soaking
  • 2 onions
  • 2 tsp salt
  • 2 peppers, dried
  • 2 tsp fennel or anise
  • n. B. Oil (sunflower oil) for frying

Instructions

Working time approx. 15 minutes; Rest time approx. 4 hours; Cooking/baking time approx. 30 minutes; Total time approx. 4 hours 45 minutes

as a starter or snack in between

Soak the split peas for 4 hours or overnight. Drain the water and mash the peas or mash them in a food processor. Finely dice the onions and finely chop the peppers, with or without seeds, depending on how spicy you prefer. Mix everything together. Add the anise or fennel and salt and knead well. Form small balls with your hands, pressing them slightly flat. Heat sunflower oil in a pan and fry the biscuits until golden brown all over. Remove the biscuits and drain on kitchen paper. Serve with mint yogurt, tomato salsa, or a mixed salad. Serve as a main course for 4 people or as a snack for 6 people.
