Ingredients for 1 servings:

  • 220 g flour
  • 100 g almond(s), ground
  • 1 egg(s)
  • 1 packet of vanilla sugar
  • 2 tsp sweetener, liquid
  • ½ bottle of butter-vanilla flavoring
  • 175 g butter, cold
  • powdered sugar

Instructions

Working time approx. 30 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 30 minutes

Wonderfully crumbly, as it is baked almost without sugar

Mix the flour, almonds, egg, vanilla sugar, sweetener, and vanilla flavoring in a bowl. Add the cold butter in small pieces. Knead everything into a smooth dough. Let it rest in the refrigerator for 1-2 hours. On a floured surface, shape the dough into small croissants, tapering to a point at the end. Place on a baking sheet lined with baking paper and bake in an oven preheated to 175°C for about 15-18 minutes. Roll in powdered sugar while still hot. Be careful! They break easily! The croissants taste especially good and vanilla-flavored if you mix ground vanilla into the powdered sugar.
