Ingredients for 1 servings:

  • 125 g ground almonds
  • 240 g butter
  • 320 g flour
  • 2 egg yolks
  • 1 pinch(s) vanilla, ground
  • 1 pinch of salt
  • 125 g icing sugar, for rolling the croissants
  • 30 g vanilla sugar

Working time approx. 1 hour; Rest time approx. 30 minutes; Cooking/baking time approx. 8 minutes; Total time approx. 1 hour 38 minutes

the well-known croissants, but without sugar in the dough, still super delicious

Quickly prepare a shortcrust pastry from the ingredients. Chill for half an hour. Shape into croissants and place on a baking sheet – I prefer small ones weighing 5.5-6g. Bake at 190°C until golden brown (approx. 8-10 minutes). While the croissants are still hot, roll them in a mixture of 125g powdered sugar and 30g vanilla sugar (I often use a good pinch of ground vanilla instead of vanilla sugar). Store in a tin to keep them fresh.
