Vanilla – Orange – Crescents

Ingredients for 1 servings:

  • 100 g nuts, e.g. almonds or pine nuts
  • 210 g butter
  • 70 g sugar
  • 280 g flour
  • 1 vanilla pod(s)
  • 1 orange(s), untreated, grated peel
  • 100 g sugar
  • 150 g powdered sugar

makes about 70 cookies

Finely grind the nuts and roast them in a pan without fat until fragrant. Remove from the pan and let cool. Cream the butter and sugar until fluffy, knead in the flour and nuts, and wrap the dough in foil and chill for 1-2 hours. Preheat the oven to 175 degrees Celsius (350 degrees Fahrenheit). Shape the dough into a roughly 3 cm thick roll and cut 1 cm wide discs from it. Shape these into croissants. Place the cookies on baking sheets lined with baking paper and bake one after the other in the oven for about 15 minutes each. Meanwhile, split the vanilla pod lengthwise and scrape out the seeds. Mix the vanilla seeds with the orange zest and sugar, and finely grind the mixture in a food processor. While the croissants are still hot, carefully roll them in the orange sugar and dust with powdered sugar.
