with red fruit compote

First, prepare the vanilla pudding with the milk and sugar as directed, then allow to cool. Cover with cling film to prevent a skin from forming. Whip the cream until stiff peaks form and add the vanilla sugar and sugar. If the pudding has become very thick, simply whisk briefly with a hand mixer on the lowest speed until creamy. Fold in the cream and whisk on the lowest speed until creamy. Finally, add the quark to the mixture and whisk to combine. Place the sponge fingers in a resealable bag and break them up into crumbs using a wooden spoon or similar. Now fill a dessert glass or similar with the cookie crumbs. Place a layer of the vanilla quark cream on top. Then place a layer of red fruit compote on top and finish with another layer of vanilla cream. Chill and garnish with more cookie crumbs and/or cream just before serving.
