Ingredients for 1 servings:

  • 5 eggs
  • 500 g sugar
  • 500 g flour, approx.
  • 2 packets of vanilla sugar

Instructions

Working time approx. 40 minutes; Rest time approx. 12 hours; Total time approx. 12 hours 40 minutes

Swabian Christmas pastries

Whisk the eggs and sugar until frothy. Mix in the vanilla and flour. Drop small spoonfuls onto baking paper. Let them dry overnight. The next day, bake at 160°C (320°F) on the lowest rack for about 18 minutes until light golden. The drying process will make the cookies lighter on top, stay smooth, and develop “feet.” This makes about 80 cookies.
