Ingredients for 4 servings:

  • 175 g butter, soft
  • 1 vanilla pod(s)
  • 1 tbsp vanilla sugar (bourbon)
  • 75 g sugar
  • 1 pinch of salt
  • 250 g flour
  • 75 g powdered sugar
  • 1 vanilla pod(s)
  • 1 tbsp water

Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes

Cookies

Stir the butter until small peaks form. Split the vanilla pod and add the seeds to the butter. Add the vanilla sugar, sugar, and salt, and beat everything until fluffy. Sift the flour and knead into a soft dough. Divide into 2-3 portions and place on a piece of aluminum foil. Form into rolls with a diameter of 2 cm and chill for at least one hour. Preheat the oven to 200°C. Cut the rolls into approximately 1/2 cm thick slices, place on a baking sheet lined with baking paper, and bake immediately in the center of the oven for about 12 minutes until light golden. Meanwhile, for the glaze, sift the icing sugar into a small bowl. Split the second vanilla pod, add the seeds to the icing sugar, add the water, and stir the sugar to form a thick glaze. Brush the sables with the vanilla glaze while they are still hot. Let cool, then store in a tightly sealed container.
