Vareniki with cottage cheese

Ingredients for 4 servings:

  • 500 g flour
  • 2 eggs
  • 1 pinch of salt
  • 200 ml water
  • 3 cups cottage cheese
  • 1 egg(s)
  • Salt
  • black pepper
  • some sour cream (alternatively sour cream or crème fraîche)
  • 2 slices of toast or white bread
  • 2 tbsp butter
  • oil

Russian dumplings

For the dough, combine flour, 2 eggs, water, and a pinch of salt to form a smooth, non-stick dough. Cover the dough and let it rest for about 30 minutes. Meanwhile, for the filling, press the cottage cheese with a kitchen towel to remove any excess liquid. Mix the cheese with one egg and season with salt and pepper. Roll out the dough thinly into 5-8 cm circles, add 1-2 teaspoons of filling to each, and press each circle together to form a pocket (press the edges together firmly to prevent the pocket from opening during cooking. Cookie cutters specifically designed for dumplings are available, which are also very helpful when folding the dumplings: roll out the dough, cut out the shape, place the dough piece in the mold, add the filling, and fold the mold together). Bring plenty of salted water with a dash of oil to a boil, then cook the vareniki for 5-10 minutes (in batches if necessary). Melt butter in a pan, cut the bread into cubes, and toast them in the butter while stirring. Sprinkle over the vareniki. Serve with sour cream. A green salad is delicious. Tip: Don’t throw away the leftover dough; roll it out again. Cut into diamond shapes and cook them. Fry the leftover vareniki and the remaining diamond shapes in oil or butter until crispy and enjoy again.
