Vegan apple cinnamon muffins with xylitol

Ingredients for 1 servings:

  • ½ apple
  • ¼ tsp, crushed cinnamon powder
  • ¾ tsp, leveled sugar
  • 2 tbsp water
  • 200 g wheat flour type 405
  • 40 g xylitol (sugar substitute)
  • 8 g vanilla sugar
  • 8 g baking powder
  • ½ tsp, crushed cinnamon powder
  • 1 g salt
  • 240 ml oat milk (oat drink)
  • 20 ml oil, neutral

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 50 minutes

Preheat the oven to 180°C (top/bottom heat). Cut the half apple into small pieces. Heat the cinnamon, sugar, and 2 tablespoons of water in a small saucepan. After heating briefly, add the apple pieces and simmer for about 5 minutes. For the batter, mix the wheat flour, xylitol, vanilla sugar, baking powder, 0.5 teaspoon of cinnamon, and salt. Then add the oat milk and oil and mix the batter until smooth and creamy. Fold the cooked apple pieces into the batter. Pour the batter into muffin tins. Bake the muffins for about 20-25 minutes, until golden brown. Do the skewer test. If the batter doesn’t stick, the muffins are done and can be removed from the oven. One muffin has approximately 200 kcal. This makes 6 muffins in total.
