Vegan avocado nut rice

Ingredients for 1 servings:

  • 2 avocados, ripe
  • 1 bag of rice (brown rice)
  • 1 tsp peanut butter
  • 1 handful of walnuts
  • 1 tbsp lemon juice
  • 1 tsp salt
  • 1 pinch(s) lemon pepper
  • 1 clove(s) garlic
  • 3 tbsp olive oil

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

as a side dish or solo

Cook the rice according to the package instructions or use up leftovers from the day before. Heat the olive oil in a pot or pan. Meanwhile, peel and finely chop the garlic clove. Halve the avocado, remove the pit, and cut into small pieces. Add the garlic and avocado to the hot bowl and fry over medium heat for 2-3 minutes, stirring occasionally. Add the lemon juice, salt, and lemon pepper and stir. Stir in the peanut butter. Crumble the walnuts over the pot, heat briefly, and then serve.
