Vegan banana bread comes with less sugar than other cakes or muffins because the ripe fruit already has enough sweetness. It also fills you up because the ingredients used in it contain a lot of dietary fiber. You need these ingredients for the banana bread:

  • A loaf pan in which you bake the bread
  • 3 very ripe bananas – brown spots are fine if you want them to be extra sweet.
  • 120 milliliters of plant-based milk, for example from soya or oats
  • 80 milliliters of vegetable oil
  • 300 grams of spelled flour
  • 3 teaspoons baking powder
  • A squeeze of lemon juice
  • 80 grams of sugar – An alternative and a little healthier would be maple syrup.
  • A bit of salt
  • You can also add walnuts, vegan chocolate, or grated nuts to the dough.
  • It is best to taste the dough beforehand and sweeten it if necessary if the bananas you are using are not sweet enough.

How to prepare your vegan banana bread

Here are the instructions on how to prepare your banana bread:

  • Preheat your oven to 180 degrees.
  • Mash the bananas with a fork.
  • First, mix all the liquid ingredients with the banana mash.
  • Mix the dry ingredients and then add them to the rest.
  • Spread the batter in your loaf pan. First, bake the banana bread for 40 minutes and then test with a toothpick whether the bread is done. If the batter still sticks to it, leave it in the oven for a few more minutes and then test again.
  • When the dough no longer sticks to the toothpick, take the mold out of the oven. Let the banana bread cool down before you turn it out of the pan.
  • You can also freeze the banana bread. After defrosting, it can be easily toasted or reheated.
