Vegan banana semolina pudding

Ingredients for 2 servings:

  • 150 ml soy milk (soy drink)
  • 100 ml juice (banana)
  • 50 g semolina (soft wheat), whole wheat or spelt also possible
  • 1 packet of vanilla sugar
  • 1 pinch of salt
  • e.g. sugar, brown, white or cane sugar

Instructions

Working time approx. 5 minutes; Rest time approx. 5 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 15 minutes

Bring the soy milk and banana juice to a boil with the salt and vanilla sugar in a suitable saucepan, stirring occasionally. Remove from the heat and gradually stir in the semolina, bring back to a boil briefly, and let cool slightly while stirring. Sweeten with sugar if desired and season to taste. The pudding should have a “mushy” consistency. If it’s too runny, stir in a teaspoonful of semolina a little at a time. If it’s too thick, stir in a little liquid (soy milk or banana juice). Pour into dessert glasses or a glass bowl and chill. Serve in the glass or turn out onto a plate/platter. Sprinkle with cinnamon and sugar to taste. A warm plum, cherry, berry, or mango compote also goes wonderfully with this.
