Vegan broccoli salad

Ingredients for 4 servings:

  • 250 g broccoli florets
  • 1 large red bell pepper(s)
  • 1 large apple
  • 30 g pine nuts
  • 1 ½ tsp mustard
  • 1 tsp agave syrup
  • 25 g olive oil
  • 15 g balsamic vinegar, white
  • 1 tsp herbal salt
  • ½ tsp pepper

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Finely chop the broccoli, bell pepper, and apple, ideally using a food processor. Prepare a marinade from the oil, syrup, balsamic vinegar, and spices and mix well with the other ingredients. Let it marinate briefly. If you have a Thermomix, you can add all the ingredients to the mixing bowl for 3-6 seconds on speed 4.
