Ingredients for 5 servings:
- 125 g gluten (seitan flour or seitan fix)
- 65 g flour (golden linseed flour)
- 50 g almond flour
- 10 g psyllium husks
- 5 g dry yeast
- 1 tsp salt
- 280 ml water, lukewarm
Instructions
Working time approx. 15 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 45 minutes

Combine all dry ingredients in a bowl and mix well. Add the water while stirring with a food processor and knead the dough for about 10 minutes. Form four to five buns from the dough and place them on a baking sheet. Brush the buns with a little water and let them rest for 1 hour in the oven at 30 degrees Celsius or with the light on. Once the buns have risen nicely, increase the oven temperature to 200 degrees Celsius and bake for 30 minutes. If the buns sound hollow when tapped, they are done.
