Ingredients for 1 servings:

  • 320 g spelt flour
  • ½ tsp baking powder
  • 130 g butter
  • 1 tsp vanilla extract
  • 80 g honey
  • 2 eggs
  • 200 g dark chocolate
  • 100 ml milk
  • Flour for the work surface

Instructions

Working time approx. 35 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 10 minutes; Total time approx. 1 hour 45 minutes

for approx. 19 cookies

Mix the flour, baking powder, and butter until crumbs form. Add the honey, vanilla, and eggs and knead into a smooth dough. Wrap the dough in cling film and refrigerate for about 60 minutes. Meanwhile, melt the chocolate in the milk and let it cool to room temperature while stirring. Preheat the oven to 180°C (conventional) (approx. 160°C fan-assisted). Dust the work surface with flour and roll out the dough thinly. Cut out round cookies and place them on a baking sheet lined with baking paper. The dough makes enough for about 19 cookies. Bake for about 10 minutes and then let cool. Stir the cooled chocolate cream again well and spread it on half of the cookies with a small knife or teaspoon. Place the remaining cookies on top of the cream and press down lightly.
