Vegan casserole

Ingredients for 2 servings:

  • 1 pointed cabbage or a small white cabbage
  • 50 g soy strips
  • 1 onion(s)
  • 500 ml vegetable stock
  • 2 tbsp flour
  • 100 ml water
  • 1 tbsp tomato paste
  • salt and pepper
  • Paprika powder
  • some oil for frying

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Finely shred or chop the cabbage. Finely chop the onion and soak the soy mince in approximately 150 ml of vegetable stock. Fry the onion and drained soy mince in oil, add the cabbage, and fry until the cabbage is translucent and brown. Reserve the soy stock! Add the tomato paste and fry briefly. Pour in the vegetable stock and soy stock and simmer for 10 minutes. Mix the flour with water and thicken the sauce slightly. Finally, season the casserole with salt, pepper, and paprika. Serve with potatoes.
