Ingredients for 4 servings:
- 1 pack of sugar peas, approx. 200 g
- 1 onion(s)
- Vegetable oil, e.g. sunflower oil
- 1 tbsp curry powder
- 1 tsp paprika powder
- 1 tbsp cane sugar
- 4 tbsp nutritional yeast
- 2 tbsp tomato paste
- 1 can chickpeas, approx. 400 g
- 1 can coconut milk, approx. 400 ml
- salt and pepper
- n. B. Rice
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes
Cook the desired amount of rice according to the package instructions. Meanwhile, finely chop the onion and wash and trim the snow peas. Briefly fry the onions and snow peas in oil in a pan. Add the curry powder, paprika, brown sugar, tomato paste, nutritional yeast, and chickpeas and stir to combine. Add the coconut milk, stir well, and bring to a boil briefly. Season with salt and pepper. Serve with rice.
