Ingredients for 1 servings:
- 1 bell pepper(s)
- 1 zucchini
- 3 small potatoes
- 200g tofu
- Gyro spice
- salt and pepper
- Paprika powder
- chives
- Parsley
- olive oil
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes
Cut the vegetables, potatoes, and tofu into small cubes. In a bowl, combine the olive oil, gyro seasoning, salt, pepper, and paprika. Add the tofu cubes and stir until evenly coated. Sear the tofu and set aside. Then, saute the zucchini and peppers. Meanwhile, cook the potatoes until tender. When the zucchini and peppers are cooked through, add the tofu and potatoes. Season to taste with salt, pepper, and paprika. Then add the parsley and chives.
