Ingredients for 3 servings:

  • 200g tofu
  • 1 spring onion(s) or regular onion
  • Paprika powder, sweet
  • turmeric
  • curry
  • Oregano, dried
  • salt and pepper
  • 3 tbsp, heaped coconut oil
  • some breadcrumbs
  • ½ ball(s) of mozzarella, cut into small pieces, optional

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

healthy and vegan, with mozzarella only vegetarian

Cut the tofu crosswise into three pieces and fry briefly on both sides in a pan with a little oil until crispy. Season the pieces with salt and paprika and place them next to each other in a baking dish. Meanwhile, finely chop the (spring) onion and sauté briefly until translucent. Season the onion with paprika, turmeric, curry, oregano, pepper, and salt. Then add the coconut oil and let it melt. Finally, add the breadcrumbs. The mixture should be crumbly, but not too dry. Spread the breadcrumb mixture on the tofu. Optionally, stir in the chopped mozzarella shortly before serving. Bake the casserole at 200 degrees Celsius (convection oven) for about 20 minutes, until the crust is crispy.
