Ingredients for 2 servings:
- 2 onions
- 150 g mushrooms
- 1 bell pepper(s), orange
- 2 small zucchini (or 1 large)
- 2 sprig(s) rosemary, fresh
- olive oil
- salt and pepper
- ½ tsp oregano, dried
- ½ tsp basil, dried
- ½ tsp thyme, dried
- 1 chili pepper(s), dried
Instructions
Working time approx. 25 minutes; Total time approx. 25 minutes
Wash and trim the vegetables. Cut the onions into eighths and the mushrooms into quarters. Deseed the bell peppers and cut into bite-sized pieces. Cut the zucchini into fairly small cubes. Place all the vegetables in a baking dish. Sprinkle with rosemary sprigs and dried spices. Season with salt and pepper. Finely chop the chili peppers and add them as well (Caution: it’s hot! If you don’t like it too hot, use one fresh chili pepper, deseed it, and cut it into thin rings). Then pour a generous amount of olive oil over the vegetables and mix well. Cook in a preheated oven at 180°C (convection oven) for about 30-40 minutes (the vegetables should still have a slight bite). Serve with stir-fries.
