Ingredients for 4 servings:

  • 150 g potatoes
  • 60 g carrot(s)
  • 60 g sweet potatoes
  • 1 onion(s)
  • 1 garlic clove(s)
  • ½ tsp Dijon mustard
  • 1 tsp lemon juice
  • ¼ tsp black pepper
  • ⅛ tsp cayenne pepper
  • 75 g margarine
  • 400 g pasta
  • 60 g cashew nuts

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Pasta with vegetable sauce

Cook the pasta according to the package instructions. Chop the potatoes, carrots, sweet potato, and onion and cook in about 240 ml of water until soft. Combine with the remaining ingredients in a blender and puree. Pour the cream over the cooked pasta and serve.
