Vegan mashed potatoes from the Thermomix

Ingredients for 4 servings:

  • 1 kg potatoes, floury
  • Olive oil for frying
  • 1 onion(s)
  • 1 garlic clove(s)
  • 200 ml soy milk (soy drink) or other plant milk
  • 200 ml vegetable stock
  • herb salt and pepper
  • nutmeg
  • Celery salt
  • 2 tbsp nutritional yeast
  • 2 tbsp soy cream (soy cream cuisine)
  • 1 tbsp butter substitute or butter-flavored rapeseed oil

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

Finely chop the onion and garlic on speed 8, scrape down the sides with a spatula, and simmer in olive oil at 120°C. Attach the paddle. Add the diced potatoes, milk, broth, and seasonings and cook at 90°C for 25-30 minutes on speed 1. Add the soy cream, nutritional yeast, and butter substitute and blend for 1 minute on speed 4.
