Vegan Matjes Housewife Style

The perfect vegan matjes housewife style recipe with a picture and simple step-by-step instructions.

  • 1 Onion red
  • 10 Pickles
  • 1 Sour apple
  • 250 g Soy yogurt
  • 100 ml Soy cream
  • 200 ml Cucumber water
  • 1 bunch Fresh dill
  • 300 g Smoked tofu
  • 0,5 Lemon fresh
  • Salt
  • Black pepper from the mill
  • 2 Bay leaves
  1. Cut smoked tofu (I like to use the one with seaweed for this recipe) into the desired shape (cubes or slices) and place in a bowl. Roughly chop the onion and spread over it. Now cut the apple into small pieces and place on top. Drizzle with lemon juice. Then cut the cucumber into pieces and spread over the apples.
  1. Now mix the soy yoghurt with the soy cream and the cucumber water from the pickle jar in a small bowl. Season well with salt and pepper. Pour the mixture with the bay leaves over the ingredients so that everything is covered a little.
  1. Chop the fresh dill and pour over the mixture. Let everything steep and serve with jacket potatoes. A mixed salad goes well with it.
