Vegan "meatballs"

Ingredients for 4 servings:

  • 1 cup oatmeal, fine
  • 1 cup oat flakes, wholegrain
  • 2 cups vegetable broth
  • 2 tbsp, heaped mustard
  • 1 large onion(s), finely diced
  • 1 small onion(s), cut into fine strips
  • 1 large carrot(s), finely diced
  • smoked salt
  • Paprika powder
  • garlic powder
  • pepper
  • Parsley, chopped, optional
  • Oil for frying

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Let the oatmeal swell in a large bowl with warm, almost hot vegetable broth. Meanwhile, sauté the onions and carrots in a pan with a little oil until translucent. Add the vegetables and mustard to the oatmeal mixture, let cool slightly, knead thoroughly with your hands, and season with the remaining spices. Optionally, add 2 tablespoons of chopped parsley; unfortunately, I didn’t have any left. Then, with wet hands, form small meatballs and fry them thoroughly in plenty of oil over medium heat. We like to serve them with a simple dressed salad. This mixture is the perfect basic recipe for vegan meatballs and can be wonderfully adapted with soup vegetables, sun-dried tomatoes, fried onions, etc. Even meat lovers will love it.
